Food network: an essential guide to american bbq traditions

We’re all about tradition here at Sam Jones BBQ. And our traditions started with Sam’s granddaddy Pete at Skylight Inn Barbecue way back in 1947, which we’re proud to continue those to this day. Recently, the Food Network heard about the North Carolina-style BBQ we’ve been cookin’ up and included us in a guide to regional barbecue all across the good ole U.S. of A.

Big thanks to Layla Khoury-Hanold for talkin’ to us about some of our favorite things: family, traditions, and smokin’ hogs!

“Jones, who learned the art of whole hog barbecue from his grandfather, Pete Jones, of the legendary Skylight Inn, says that the beauty of whole hog barbecue is that chopping the different cuts together creates a blend of distinct textures. "It makes a flavor explosion when you eat it: there’s crunch, changes in texture and flavor, and little concentration of salt on the skin," he says.”
